Smokey Bacon & Tomato Breakfast Casserole

  • 1 package of Smokey Bacon & Tomato Dip Mix
  • 1 cup milk
  • 6 eggs
  • 4 cups cubed bread (e.g., French or sourdough)
  • 1 cup shredded cheese (cheddar or Swiss)
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup diced tomatoes (optional)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together milk, eggs, and dip mix.
  3. Layer the bread, cheese, bacon, and tomatoes in a greased casserole dish.
  4. Pour the egg mixture over the top and let sit for 10 minutes.
  5. Bake for 35-40 minutes or until the eggs are set and the top is golden.
  6. Serve warm for breakfast or brunch.
